If you buy fresh opakapaka for fifteen dollars a pound, your trim also costs fifteen dollars a pound. There are only so many times you can feed the staff some creative fish dish. Its what I call , "making something out of nothing," even though it still costs fifteen dollars a pound. Being old school, I hate to see product thrown away, or spoil in the reefer, and we respect the food and the making of it by using all of it. It's also like being at home, you get hungry, you see what you've got in the fridge, you make something that you would enjoy with what you've got, and if you are feeding family or friends, you put some love into it. This tasted ono, full of flavor. Sonny is one that enjoys cooking.
