Soki means sparerib in Okinawan.  Lunch actually started out with a potato leaf rice soup,  it was soothing, tasty and ono.   I actually was thinking of ordering the Soki Soba,  but opted for all the vegetables instead of the noodles, but the braised pork belly on the noodles looked really tasty.  Chanpuru, the bittermelon with eggs and tofu, is also a favorite of mine.  Okinawans make a great pigs feet soup as well.  Great lunch,  I was inspired to try and make something.  If you look for it, you can find inspiration in the most simple of things, anywhere, anytime.  For dessert, I had strawberry jello, haha,  felt like a kid again for a minute.  The waiter asked if I wanted whipped cream on it,   back in the day it was cool whip out of a can, haha, loved it.
