Dungeness Crab, Red Jalapeno Garlic Vinaigrette, Sumida Farms Watercress, Makaha Mangoes

We have over 200 reservations for tonight, so the presentation of this dish needed to be changed so that we could actually plate it at a manageable level. Schezuan peppers sprinkled on the outside rim.  We will try it tonight and see what happens.
