We hosted the Star Chefs of America and the 12 people being recognized as the Rising Star Chefs of Hawaii. The guest chefs were George Mavro, Roy Yamaguchi, and Brian Etheridge----we all did a dish and the kitchen put out a whole bunch of pupus at this stand-up affair. This was one of the pupus and it was quite a hit with the locals, some of the visitors had the calamongai stir stick for the first time and enjoyed it---- when describing it, I say it's like the Filipino artichoke in the way you eat it. The broth is made of pork belly, kalua pig, calamongai leaves, ginger, garlic, bay leaves and peppercorns. In Singapore you see it in the open markets, they call it 'drumsticks.' The Indians also cook with it, it is a very healthy vegetable and dish to eat----so long as you just don't eat the pork belly.
