The Pineapple Room needs more pineapple dishes, I think. Michael made this pickled pineapple and instead of chunking it, he sliced it thin. On the table was a nice, cooked slab of pork belly. I told Mike that I see a Pork Belly Banh Mi sandwich right here, in the making. Just line the roll with a couple slices of pickled pineapple, so that each bite would have a piece of it, top it with the pork belly, and then add the more traditional pickled daikon and carrots, some herbs, and voila, a sandwich.
