This was Michael Leslie's first menu development session at the Pineapple Room. I am proud of Mike, he did really well just putting it together and we had some fun coming up with a couple of new things we played with. This bowl of noodles is coming soon to the Pineapple Room's lunch menu. What is not easy for anyone is making something, and allowing me to come on top of your dish, making suggestions, reworking it, and reworking it, until we have a dish that is ready to go. It requires you initiating the dish by putting your energy into making it onto the plate, then checking your ego at the door to let me do my thing to your dish, and then the perseverance and drive to see it through to the end. Mike made a bowl of noodles for me. I dismantled it and gave him instructions on how I would do it. The ingredients are still the same, the broth really changed. I made the broth how I would like to eat it, a little lighter and with a new dimension added to it. Kudos to Mike, and hopefully you all will come down to the PR and give it a try. It was ono, as you will see in some faces slurping it up.
