I could have just used a pizza dough recipe, however, I tried a technique using the same dough we make our dinner rolls from. You roll out your dough flat like a normal pizza, then par bake it half way just to set the outside. Next you take the dough and roll it really thin and flat again with a rolling pin. This makes for a thin and crispy crust. Either griddle or grill the dough. This sets it thin, and you can place your toppings on and then bake it for just a little while longer to melt the cheeses and heat the ingredients. Here we have char siu duck, ko choo jang, shiitakes, and kalua pig with mozzarella. The other one is a shrimp, béchamel, goat cheese, parmesan and pickled onions.
