Samantha and Kelly are working on a dish together. It's like a steak and potato moco that is evolving. What I am most proud of is the fact that they are in the process, they are working on something and that, in the process, Kelly actually created a sauce that she liked (as well as I and others). It's like climbing a tree -- you must take the first step up to get on a branch. While on the branch working on the idea, you discover you like something else, so you go to another branch, and you keep doing this until you find the idea you like best, or realize you have abandoned what you started out with and now found something new. You can also discover something you never thought of in the beginning. You would never have done it had you not been 'in the process'.
For Kelly's new sauce I now say, "put that in your back pocket" for a future time, when you need a sauce that will fit what you are working on. If one embraces the idea that the journey and process is more important than the destination, it will make you a better culinarian in the end and your experience here will be far more rewarding and expansive than just working the line doing the same things every day.
