In Maui, worked with DeeAnn, she has a memory like an elephant.  The Amasia team had the benefit and luxury of three full months and another three months before opening, for menu development.  We visited, revisited, and created over a hundred twenty menu items.  She remembered this one-----the main star is the lumpia, it contains cambazola cheese.  When the lumpia, flilipino spring roll, is fried crispy, the cheese melts,  the guest or server will cut the middle , crack it open, and pour the melted cheese onto the dish, creating part of the dressing, and also leaving behind a delicious crispy shell lined with ono cheese. This salad is of persimmon, apples, korean pears, pomegranate, raisins, almonds, and frisee.  Spring rolls, harumaki, egg rolls, lumpia,  I am sure other cultures have the same idea with a different name.
