Putting on a dinner for one thousand people is a science that many culinarians do not get to experience.  We did this past Thursday night.  We executed our five course menu with a few canapés at the Honolulu Convention Center.  There were about forty of our own staff and forty of the convention's staff helping us out.  Our staff included all of the back of the house staff from the King St restaurant as well as everyone from Accounting,  Human Resources, AWRH, waitstaff, and management, as well as some of the Pineapple Room staff.  It was a total team effort.  It helps that you work with someone you know even though they might not be a culinarian.  All of the managers were up front wiping plates and being the final eyes.  The planning and prepreparation was the key, and Michelle and the team put a lot of energy and time into this phase. Doreen, our controller, told me thank you for the team building exercise, we should have paid them, haha.  I think her accounting team enjoyed the departure from their regular work.  I heard a few sore feet and backs , they should make those tables a little higher to plate all those dishes.  In the end,  a lot of people were happy,  there were some minor hiccups that we overcame, and the team stayed on course, no drama,  and a huge success.  It shows what the team can do if they really want to do something, they can.
